Job Description:
Qualifications:The candidate must be able to communicate in fluent English, be flexible and be able to work as part of a team. Must have supervisory experience and be able to lead own station. Must have the ability to work with international crew and perform under pressure.
Responsibilities:
-Prepare highest quality cuisine in accordance with the Cruise Line standards.
-Requisition required food items based on menu and anticipated food counts and check received goods.
-Ensure proper storage.
-Work with line cooks assigned to station to ensure they prepare food in accordance with recipe and presentation standards.
-Assist other work stations as necessary to ensure highest quality food is provided to guests.
-Train line cooks in the preparation of all menu items.
-Check all set-ups for various buffet and of service stations, prepare
show plates.
-Check room service mis-en-place.
-Check special orders and prepares for special functions.
-Ensure economical working procedures and minimize food waste.
-Ensure proper safety, hygiene and sanitation practices are being kept.
-General cleaning according to USPH standards.
-Perform all other duties as requested by supervisor.
-Always project a favorable image of the Cruise ship.
Experience:
-Trained in European cooking but also focus on
traditional American cuisine
-Private club experience helpful
-Three to five years cooking experience in five-star operation; hotel, restaurant or ship.
-At least one year as Entremetier, Garde Manger or Poissonier.
This position is six months on board the vessel and two months off.
