Job Description:

Position:
Responsible to manage 3 outlets including In Room Dining, reporting directly to the Executive Chef.
The position manages a diverse team from many cultures and backgrounds.

Qualifications:
Culinary Degree.
Knowledge of fine dining menu development.
The candidate must be able to communicate in fluent English, be flexible and be able to work as part of a team.


Responsibilities:
Management of fine dining restaurant, in room dining and bistro.
Supervision and training of galley staff.
Assists and maintains with menu development.
Scheduling, time and attendance of galley staff.
Menu costing and budgets.
Ensure proper safety, hygiene and sanitation practices are being kept.
General cleaning according to USPH standards.
Ensure economical working procedures and minimize food waste.




Experience:
At least 2 years experience as a Sous Chef in a 5* resort, hotel, club or luxury cruise ship or yacht.

Budget, planning and costing experience.

Must have supervisory experience and be a strong leader. Must have the ability to work with international crew and perform under pressure.


Summary:
The Sous Chef maintains the highest of standards for the Cruise Line in the galley. The Sous Chef is responsible to manage, motivate and train the culinary staff and provide Residents and guests with the highest quality product.

The Sous Chef position is a 4 month on board 2 month off position, reporting directly to the Executive Chef on board.
